Pam’s Ramen Seasoning - 20 Portions

Ingredients
  • 5 Tbsp garlic powder
  • 5 Tbsp onion powder
  • 5 Tbsp dried chives
  • 5 Tbsp Miso powder
  • 5 Tbsp powdered ginger
  • 5 tsp Dashi powder
  • 5 tsp dried shiitake mushroom, grated
  • 5 tsp wakame seaweed
  • 7 tsp soy sauce powder
  • 7 tsp red chili flakes (optional)

  • subheading: For a single portion of ramen:
  • 2 cups of water
  • 2 tsp of Better Than Bouillon flavor of choice (chicken, vegetable, mushroom, grilled onion)
  • ½ Tbsp (or more) of Pam’s Ramen Seasoning
  • Handful of Dehydrated vegetables
  • ½ tsp sesame oil
  • 1 Tbsp lemon juice
  • 1 ramen noodle square boiled for 4 min separately (If you want a boiled egg, boil the egg for 7 min., remove the egg and boil the ramen in the egg water for 4 minutes.)
Steps
  1. To make a large 40 oz bowl of ramen: Put 4 cups of water in a pot, add 4 tsp of Better Than Bouillon (any flavors), 1 Tbsp of the above seasoning mixture, 1 tsp of sesame oil, bamboo shoots, water chestnuts, bean sprouts, a handful of dehydrated vegetables, the sesame oil, any meat and vegetables you want to add and maybe an egg. In a separate pot of 4 cups of cold water, blanch the bok Choi for 30 seconds, and remove from the water. Then to the same water, add an egg and cook for 7 minutes and remove and place in cold water (to stop the cooking), then to the same water, add the ramen noodles and boil for 4 minutes. Put the noodles in the bowl and add the broth and decorative topping to the top of the bowl.
Notes
  • If you have it, add ¼ cup of shredded chicken, beef, pork or ham.
  • For heat, add more red chili flakes, Sambal Oelek, red chili paste, jalapeño, or any favorite hot sauce.
  • If you use bok Choi blanch it then fry it with sesame oil and sesame seeds to bring out its true flavor.
  • Use tahini for more sesame flavor.
