chocolate sourdough
Ingredients
  • Bloom 50g Dutch pressed cocao with 100g hot coffee- stir good and let cool. once cooled combine with-
  • 150g active starter
  • 350g water
  • 500g flour
  • 60g brown sugar
  • 15g vanilla extract
  • 10g sea salt
  • Mix and let rest for 1hr
  • 4 rounds of stretch and folds 30minutes apart, on the 3rd round add 130g semi sweet morsels. It’s a super sticky dough so handle gently!
  • Bulk ferment overnight (I did 8hrs)
  • Cold proof (I did 9hrs)
  • I used my typical bake of
  • 475degrees covered for 25 and then bump down to 450 uncovered for 15- I would have left it in for another 5 because it was slightly chewy
