Favorite Healthy Strawberry Muffins (To Share with the Kids)
Ingredients
  • 1¼ cups whole wheat flour
  • ½ cup rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup milk
  • ⅓ cup maple syrup (or honey)
  • ¼ cup unsalted butter (melted and slightly cooled or avocado or coconut oil)
  • 2 eggs (lightly beaten)
  • 1 teaspoon pure vanilla extract
  • 1 cup diced strawberries (stems removed)
  • 1 tablespoon fresh lemon zest (optional but recommended)
