  • 2 Pounds Sweet potatoes, halved or quartered

  • ½ Cup Vegan mayo, I used Hellman's
  • ¼ Cup Cilantro, chopped
  • 1 Tablespoon Lemon juice
  • 1 teaspoon Agave syrup
  • ½ teaspoon Paprika or Smoked paprika
  • Salt and Pepper to taste
