Ingredients

  • 2 tbsp butter
  • 1 cup onions, chopped
  • 2 carrots, chopped
  • 10 oz frozen cauliflower rice (see notes if using fresh cauliflower rice)
  • ¼ cup chicken broth
  • 2 tablespoon fresh parsley
  • ½ cup Parmesan cheese
  • ½ lemon
