Laura's Peanut Noodles
Ingredients

  • 1⁄4 teaspoon sea salt
  • 1⁄4 teaspoon chili powder
  • 1⁄8 teaspoon cayenne pepper

  • NOODLES and GARNISH
  • 6-ounces cooked and partially cooled soba noodles (use wheat-free, gluten-free soba if needed)
  • ½ cucumber, peeled, seeded, and thinly sliced
  • Several cherry or grape tomatoes, cut in half
  • 1 to 2 scallions (green and white parts) thinly sliced
