Ingredients
  • 3.5 lbs boneless skinless chicken thighs
  • onion powder
  • garlic powder
  • Tony's
  • salt
  • pepper
  • 3 tb butter
  • ½ yellow onion, finely diced
  • 6 oz fresh spinach and stir in
  • ⅓ cup roast red pepper, chopped
  • 32 oz heavy whipping cream
  • 5 oz grated parmesan
  • little more Tony's
Steps
  1. Season chicken with onion powder, garlic powder, Tony's, salt and pepper.
  2. Sauté chicken for 3 to 4 minutes. Chicken will finish cooking in sauce.
  3. Pull chicken from pan.
  4. Add butter to pan and diced yellow onion. Sauté until translucent.
  5. Add lots of garlic and sauté 1 to 2 minutes more.
  6. Add in spinach, roasted red pepper, heavy whipping cream, grated parmesan and a little more Tony's.
  7. Let it simmer just until cheese melts.
  8. Add chicken and chicken juice to sauce and stir to coat.
  9. Cook on med-low for 15 minutes stirring occasionally so it does not stick/scorch.
  10. Serve in bowls with salad.
