Lentil and Veg Loaf
Ingredients
  • 2 x400g cans lentils
  • 1 cup brown rice
  • 1 red capsicum, finely chopped
  • 1 red onion
  • 1 tomato
  • 1 cup breadcrumbs
  • 2 tbsp tomato paste
  • 2 tbsp bbq sauce
  • ¼ cup parsley
  • ¼ cup fresh basil
  • 2 egg whites
Steps
  1. Combine all ingredients in large bowl.
  2. Press into greased and lined loaf tin.
  3. Bake for 1 hour at 180.
  4. Stand for 15 min before turning out.
