Instant Pot Green Tomato Soup
Ingredients
  • 1 TBS olive oil
  • 4 slices thick (smoked or maple) bacon, diced
  • 1 1⁄2 cups scallions , Leeks work as well
  • 1 tablespoon garlic , finely chopped
  • 1 carrot, diced (optional)
  • dash of cumin
  • 1 whole bay leaf
  • 4 to 5 green tomatoes (2 ½ lbs), cored & diced (leave skins on)
  • 1 can cannelloni beans, drained
  • 2 cups chicken stock/broth
  • ½ teaspoon each salt & pepper - to taste
Steps
  1. Turn pot on to Saute.
  2. Cook bacon until brown.
  3. Add scallions (leeks) and garlic.  Cook 2 to 3 minutes, until tender.
  4. Add carrots.
  5. Add cumin, bay leaf, beans, chicken stock, salt & pepper.
  6. Add tomatoes and stir.
  7. Close IP and set valve to seal
  8. Set to manual for 10 minutes, NPR for 10 minutes.
  9. Remove bay leaves.
Notes
  • 1.  I put my soup in my Vita Mix and blend until smooth.  An immersion blender will also work.  The soup can also be eaten as is without blending.
