  • ½ cup red wine may leave out if needed
  • 6 cups vegetable broth
  • 1 ½ pounds potatoes, peeled and cubed (about 2 russets)
  • 4 medium carrots, peeled and cut into 1 inch pieces
  • 4 stalks celery, cut into 1 inch pieces
  • 3 tablespoons tomato paste
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • ¼ cup cornstarch*
  • ½ cup water
  • 1 cup frozen green peas, thawed
  • salt + pepper, to taste
  • fresh chopped parsley, optional for garnish
