Lily's Chicken Knockoff
Ingredients
  • 1 cup uncooked jasmine rice, rinsed
  • subheading: for the chicken:
  • 3 large boneless skinless chicken breasts, thawed & halved
  • equal parts freshly ground black pepper, garlic powder, italian seasoning
  • ½ part salt
  • subheading: olive oil:
  • a pad of butter
  • 1 lb fresh baby spinach (will yield about 1 cup cooked)
  • 1 large garlic clove, minced
  • 6 oz fresh goat cheese
  • subheading: for the lemon basil sauce:
  • 1 small jar artichoke hearts (about 10 quartered pieces)
  • 1 lemon, zested & halved
  • 2 Tbsp freshly chopped basil leaves
  • ¾ cup chicken stock
  • ½ cup white wine (I used Riesling, slightly dry; slightly sweet)
  • 3 Tbsp flour
  • subheading: for the honeyed spaghetti squash:
  • 1 small spaghetti squash (about 4 lbs)
  • 2 Tbsp pure local honey
  • 1 tsp dark brown sugar
  • ½ tsp salt, ½ tsp pepper, ½ tsp garlic powder
