Quick & Easy Grilled Lemon Chicken
Ingredients
  • 1 ½ pounds boneless, skinless chicken thighs (or thinly pounded chicken breast)
  • 1 large, juicy lemon, zested & juiced
  • 2 cloves garlic, finely chopped or grated
  • 2 tablespoons olive oil
  • optional: 2 tablespoons finely chopped hardy fresh herbs, such as oregano, rosemary or thyme (see Recipe Notes)
  • kosher salt & ground black pepper, to season
