Ingredients
  • 4 leeks sliced or 2 medium/lage onions diced or precooked onions from freezer
  • 6 medium sized potatoes, peeled- yielding about 6 cups diced or cut to equal size potatoes
  • 6 cups of broth (chicken or veggie) (equal amount to potatoes)
  • 1 8oz block of cream cheese, or a bit of milk or cream- add at end just enough to make it white
  • olive oil for saute onions salt & pepper
  • toppings of choice (bacon, scallions, cheese etc.)
