Ingredients
  • 3 tablespoons neutral oil (such as canola, vegetable, or avocado oil)

  • 1½ tablespoons doubanjiang (spicy bean sauce)
  • 2 pounds Taiwanese cabbage (washed and thinly sliced; about 1 medium-sized cabbage)
  • 1 tablespoon Chinese black vinegar
  • 1½ teaspoons soy sauce
  • ½ teaspoon sesame oil
  • ¼ teaspoon white pepper
  • ¼ teaspoon sugar
  • ¼ cup water
  • 1 ½ teaspoons cornstarch (mixed into a slurry with 2 tablespoons water)
  • salt (to taste)
