Chicken Thighs with Rice, Mushrooms, and Broccoli

  • 1 tbsp butter
  • 4 to 5 large button mushrooms sliced thickly
  • 1 shallot diced
  • 2 cloves of garlic minced
  • 1 cup uncooked Jasmine rice
  • 2 cups chicken broth
  • ½ cup water
  • 1 cup broccoli florets
  • Fresh parsley chopped
