Tropical Quinoa & Cod Burrito
Ingredients
  • subheading: Ingredients for salsa (makes about 6 servings):
  • ⅓ cup diced red bell pepper
  • ⅓ cup diced yellow bell pepper
  • ½ jalapeño (chopped)
  • ⅓ cup chopped cilantro
  • ½ large avocado (diced)
  • ⅓ cup diced mango
  • ⅓ cup diced pineapple
  • ½ tablespoon garlic (paste or minced)
  • juice from 1 orange
  • subheading: Ingredients for quinoa-cod mixture (makes 3 large burritos or 6 smaller burritos):
  • 1 lb fresh cod (or you can add an extra ½ lb to boost the protein content)
  • 1 ½ cup cooked quinoa
  • ⅓ cup chopped green onion
  • spray olive oil
  • subheading: Seasonings:
  • 1 teaspoon cumin
  • 1 teaspoon chipotle chili powder
  • pinch of sea salt & pepper
  • subheading: Ingredients for 1 burrito:
  • 1 large or small whole wheat tortilla**
  • ½ cup raw spinach
  • 1 serving of quinoa-cod mixture (large or small)
  • 1 or 2 servings of tropical salsa
