Vegan Asparagus and Parmesan Risotto

Ingredients
  • 1 lb asparagus trimmed
  • 2 tablespoon vegan butter
  • 1 small onion finely chopped
  • 2 garlic cloves finely chopped
  • 2 cups arborio rice
  • ¾ cup dry white wine
  • 7 cups veg stock
  • 1 cup vegan parmesan cheese (or nooch?)
  • 3 tablespoon vegan mascarpone alternative (cashews and soy milk?)
  • ⅓ cup chives
  • Lemon wedges
  • coarse salt and freshly cracked black pepper to taste
