Cindy Lou's Apricot Almond Bars
Ingredients
  • 1 cup slivered almonds
  • 1 cup pecans
  • ½ cup almond flour
  • ½ cup coconut oil
  • ½ cup almond butter
  • ¼ cup maple syrup
  • 2 tsp vanilla
  • ½ tsp salt
  • 1 cup dried apricots, chopped
Steps
  1. -Toast almonds in oven @ 350 for 8 to 10 mins.
  2. -Pulse toasted almonds in food processor until coarse.
  3. -Stir almonds into almond flour.
  4. -Combine coconut oil ands almond butter in bowl and microwave until mixture has fluid consistency (about 20 seconds).
  5. -Stir in maple syrup, vanilla & salt into almond butter mixture.
  6. -Combine wet and dry mixtures.
  7. -Add chopped apricots.
  8. -In an 8x8 parchment paper lined baking pan, pat mixture into pan, packing it down.
  9. -Place in refrigerator to harden.
