Ghormeh Sabzi Recipe (Persian Herb Stew)
Ingredients
  • 1 large yellow onion, chopped
  • 6 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon EACH: kosher salt, ground turmeric AND black pepper
  • 1 ½ pounds beef stew meat, in 1½-inch cubes (see notes)
  • 1 chicken or beef bouillon cube (optional)
  • 4 cups water
  • 5 dried limes (lemoo amani)
  • 1 bunch cilantro, finely chopped
  • 1 ½ bunches parsley, finely chopped
  • 12 ounces fresh baby spinach, finely chopped
  • 2 bunches green onions, finely chopped
  • 2 tablespoons dried fenugreek
  • 1 (15 ounce) can red kidney beans (or black eyed peas)
  • 1 tablespoon freshly squeezed lemon juice
