Colcannon (Traditional Irish Potatoes)
Ingredients
  • 3 large Russet Potatoes (peeled, cut into chunks)
  • 3 medium Red Potatoes ( skins left on, cut into chunks. The red skins add texture)
  • 4 tbsp Butter (more for serving)
  • 1 tsp Garlic (minced)
  • 2 cups Cabbage or Kale (chopped)
  • ¼ cup Green Onions
  • 1 ¼ cups Half and Half or Cream (more if needed)
  • 1 tsp Kosher Salt
  • ½ tsp Cracked Black Pepper
