Jackie Kennedy Antipasto Salad
Ingredients
  • 8 ounces spiral pasta, such as rotini
  • 1 cup cherry tomatoes, halved
  • ¼ medium red onion, finely diced
  • 2 cups romaine lettuce, chopped
  •  
  • ¼ cup fresh basil, chopped
  • 1 jarred roasted red pepper, thinly sliced
  • 1 cup olives, green and black, pitted
  • 1 cup canned artichoke quarters, drained
  • ½ cup pepperoncinis, drained and sliced
  • 8 ounces mozzarella, fresh, cubed, or marinated, shredded if not cubed
  •  
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons sugar, can substitute maple syrup
  • 6 tablespoons olive oil
  • 1 teaspoon kosher salt, plus more, to taste
  • 1 tablespoon Italian seasoning
