Refried Beans
Ingredients
  • Pinto Beans
  • Water
  • Salt
  • Minced Garlic
  • Cooking Oil
  • ½ Onion Finely Sliced
  • 1 tsp Minced Garlic
Steps
  1. Sort and sift through the beans to remove any dirt, rocks, or split beans. Rinse the beans.
  2. Soak beans in cold water with salt overnight. The next day, rinse the beans and transfer them to a pot full of water. Bring the beans to a boil, reduce heat to a low simmer, add salt, then cover and cook for about 3 hours. Check throughout the 3 hours to make sure that they have enough water.
  3. Once cooked, blend the beans, add bean broth, and minced garlic. Don't add too much bean broth or they can come out too watery. You can always add water to make them thinner, but it's hard to remove the water from the blended up beans.
  4. Heat cooking oil in a skillet. Fry the onion and the minced garlic. Add the blended pinto beans. Bring to a boil, then reduce heat to a low simmer. Cook for 5 more minutes stirring constantly.
