Sun-Dried Tomato & Cashew Mozzarella Pizza
Ingredients
  • 1 cup quinoa (soaked in 1 ½ cups water overnight or for 7 hours)
  • 2 tablespoons mixed herbs
  • 2 tablespoons lemon juice
  • 1 teaspoon chili flakes
  • 1 cup cashews (soaked overnight)
  • ¼ cup tomato paste
  • A handful of mushrooms
  • ¼ cup sun-dried tomatoes
  • 1 cooked beetroot or 1 cup of cooked squash
  • Rocket (arugula) toasted pine nuts, to garnish
  • 1 cup cashews (soaked overnight)
  • Juice ½ lemon
  • 2 tablespoons nutritional yeast (if you don’t have this, use ¼ stock cube)
