Oil-Free, Vegan Pad Thai (Lowered-Fat, Fast)
Ingredients
  • subheading: In a blender, blend smooth the following and set aside:

  • 1 heaping tablespoon unsweetened almond butter or peanut butter
  • ¼ cup lime juice (bottled is good)
  • 2 tablespoon tamari
  • 3 tablespoon ketchup
  • 1 to 3 tablespoons maple syrup
  • 1 teaspoon minced ginger
  • 1 to 3 garlic cloves
  • ¼ teaspoon ground cayenne pepper

  • Prepare a large pot for cooking rice noodles and cook as directed on package. While waiting for noodle water to boil, chop and measure vegetables.

  • 8-ounces dry rice noodles (rice stick or vermicelli)
  •  
  • 1 cup sliced sweet peppers
  • 1 cup julienned carrots
  • ½ cup sliced green onions
  • 1 cup mung bean sprouts
  • ¼ cup chopped cilantro
