Authentic Pasta E Fagioli (Vegetarian)
Ingredients
  • 1 medium onion
  • 3 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 6 to 8 fresh basil leaves
  • 1 tablespoon fresh parsley (optional)
  • 3 cloves garlic
  • 15 ounce can cannellini or great northern beans (cannellini are white kidney beans)
  • 5 cups hot water
  • 1 ⅓ teaspoons salt
  • ½ teaspoon black pepper
  • 1 pound ditalini pasta (or other small pasta; see notes)
  • ⅓ cup freshly grated Parmesan cheese
  • red pepper flakes to taste
  • extra Parmesan to serve
