Ingredients
- 125g wholewheat penne
- 75g chorizo sausage, sliced thinly
- 390g carton chopped tomatoes with onion and garlic
- 100g ready roasted red peppers in brine, drained and cut into thick strips
- 30g pitted black olives in brine
- Pinch of chilli flakes
Steps
- Cook the past according to the pack instructions
- Meanwhile, heat a frying pan and add the chorizo. When it has released a little oil and is golden on both sides, stir in the tomatoes, peppers, olives and chilli flakes. Cook for 8 to 10 minutes to thicken the sauce.
- Drain the pasta and stir into the sauce, along with a splash of the cooking water to get a nice consistency.
- Serve with a green salad
