Chorizo and Pepper Pasta

Ingredients
  • 125g wholewheat penne
  • 75g chorizo sausage, sliced thinly
  • 390g carton chopped tomatoes with onion and garlic
  • 100g ready roasted red peppers in brine, drained and cut into thick strips
  • 30g pitted black olives in brine
  • Pinch of chilli flakes
Steps
  1. Cook the past according to the pack instructions
  2. Meanwhile, heat a frying pan and add the chorizo.  When it has released a little oil and is golden on both sides, stir in the tomatoes, peppers, olives and chilli flakes.  Cook for 8 to 10 minutes to thicken the sauce.
  3. Drain the pasta and stir into the sauce, along with a splash of the cooking water to get a nice consistency.
  4. Serve with a green salad
