Feta Tofu cheese - Vegan

Ingredients
  • Block extra firm tofu
  •  
  • 2 tblsp Greek seasoning
  •  
  • 3 tblsp Greek olive oil
  •  
  • 1½ lemons juiced
  •  
  • 1 tsp salt
  •  
  • 2 tblsp acid (Apple cider venegar/wine or rice vinegar)
  •  
  • 1 tblsp white miso
  •  
  • Olives
  •  
  • 2 tblsp Olive brine
Steps
  1. Place tofu on upturned small plate & weight down with dish for 2 hours
  2. Cut into ½ inch blocks & add to marinade
  3. MARINADE
  4. Mix Greek seasoning, oil, lemon, acid, salt, olives & olive brine
  5. Pour over tofu & marinade for 2 hours at room temperature
Notes
  • Add to Greek salad of tomato, onion & cucumber
