Ingredients

  • 330g bread flour or high protein flour ( I use Japanese bread flour)
  • 45g cake flour or low protein flour (I use Japanese cake flour)
  • 1tsp +¼tsp instead yeast
  • ½tsp + ¼tsp  fine salt
  • 25g caster sugar
  • 150g fresh milk (cold from fridge)
  • 105g water
  • 30g unsalted butter, room temp
  • subheading: Filling:
  • 50g butter (salted), divide into 10 portions, optional (you may omit if you prefer less buttery)
  • Egg wash-egg yolk + milk , or just milk only
