Satay Baked Aubergine and Broccoli Bowl
Ingredients
  • 120 g wholegrain rice
  • 2 tbsp sesame oil
  • 160 g aubergine
  • 2cm cubed
  • 1 broccoli
  • 1 x head broccoli. cut stalks into cubes/ florets into 3cm pieces
  • 160 g spring onion
  • roughly chopped (reserve some for garnish)
  • 5 radish
  • finely sliced
  • subheading: SATAY SAUCE:
  • 1 tbsp peanut butter
  • 1 tbsp tamari
  • 1 tsp red chilli powder
  • 1 lime
  • juiced
  • 1 tbsp honey
  • 100 ml coconut milk
  • full fat coconut milk
