Chicken Pesto Orzo Skillet
Ingredients
  • - olive oil
  • - 2 slices bacon
  • - 1 medium onion
  • - 3 cloves garlic
  • - 3 chicken breasts sliced
  • - 3 cups dry orzo
  • - 4 cups chicken broth
  • - ½ tsp garlic powder
  • - salt and pepper
  • - ½ to ¾ cup pesto
  • - 1 cups broccoli pieces
  • - ½ to 1 cup milk or light cream
  • - parmesan cheese
Steps
  1. Heath oven to 425. In warm skillet add olive oil, chopped onion and garlic, cook approx. 5 minutes. Add sliced chicken and bacon, cook 5 more minutes. Add the spices, chicken broth, pesto, orzo and let simmer for approx. 6 minutes until orzo is el dante. Add the broccoli pieces, stir well then transfer to over, covered, for 12 to 15 minutes. Once it is cooked, add the milk/cream and stir well. Add the parmesan on top and serve.
