Perfect Crispy Kibbeh (Lebanese Lamb Croquettes)
Ingredients

  • 1 cup fine bulgur I have used the red bulgur, it’s healthier
  • 1 cup fine semolina
  • 1 teaspoon salt
  • 1 ½ cup boiling water
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon coriander powder
  • 3 tablespoon olive oil
  • ½ cup room temperature water
  • 1 medium onion grated
  • subheading: FILLING:
  • 400 gm minced lamb meat
  • 1 large onion finely chopped
  • 2 tablespoon olive oil
  • ½ teaspoon black pepper
  • 1 teaspoon coriander powder
  • 1 teaspoon paprika
  • ¼ teaspoon cinnamon powder
  • ½ teaspoon salt
  • 3 tablespoon roasted pine nuts Added later when the filling is at room temperature
  • note: Oil to deep fry the kibbeh.
