One Pot BBQ chicken baked potato (Instant Pot)
Yummy baked potato with shredded bbq chicken made in the Instant Pot

Ingredients
  • 4 medium russet potatoes, washed
  •  
  • 1 to 2 pounds of boneless skinless chicken breast tenders
  •  
  • salt and pepper to taste
  •  
  • 1 cup of water
  •  
  • 1 bottle of your favorite or homemade BBQ sauce
Steps
  1. Place chicken breast tenders in the Instant Pot, add 1 cup of water
  2. Add salt and pepper to taste
  3. Wash Potatoes and prick with a fork
  4. Place potatoes in a steamer basket and place them in the Instant Pot on top of the chicken
  5. Place lid, make sure it is set to "sealing"
  6. Place 15 minutes on high pressure on the Instant Pot
  7. Once the time is done cooking, allow a natural  pressure release for about 10 minutes, then quick release the steam
  8. Remove potatoes. Set aside
  9. Remove chicken from water. Dump the water.
  10. Shred the chicken in the manner of your choosing
  11. Return chicken to Instant pot. Add BBQ sauce.
  12. Set the Instant Pot to "sautee" and allow the chicken to soak up some of the BBq sauce.
  13. Plate potatoes, split. Add some of the chicken and a little extra BBQ sauce.
  14. Serve.
