A hearty little breakfast muffin that tastes like oatmeal cookies.

Ingredients
  • 1½ cups all-purpose flour
  • 1 cup quick oats
  • ½ cup brown sugar
  • 1 Tbs baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 cup milk
  • 1 egg
  • ¼ cup vegetable oil
  • ½ tsp vanilla extract
  • ½ cup chopped nuts (walnuts or pecans)
Steps
  1. Preheat oven to 400° and prepare a muffin pan by greasing well or lining with paper cups.
  2. In a small bowl, whisk together milk, egg, oil and vanilla. In a separate bowl, combine flour, oats, sugar, baking powder, salt and spices. Make a well in the dry ingredients, pour in the wet ingredients, and stir gently just until combined. Fold in nuts.
  3. Spoon batter into the muffin cups and bake for 20 to 25 minutes.
Notes
  • I suppose you could also add raisins, if you swing that way.
