Ingredients
- 5 slices bacon diced
- 1 Tbsp unsalted butter
- 1 large yellow onion diced or chopped
- 2 cloves garlic minced
- ¼ cup all purpose flour
- 12 oz beer we prefer a lager
- 2 cups reduced sodium chicken stock or chicken broth
- 1 ½ cups half and half or heavy cream
- 1 tsp dried mustard can be substituted with an equal amount of dijon mustard
- 1 to 2 tsp hot sauce
- ½ tsp Worcestershire sauce
- ½ tsp kosher salt
- ½ tsp dried thyme
- ¼ tsp black pepper
- 2 cups shredded medium cheddar cheese shredded from an 8 oz block
- ½ cup shredded Pepper jack cheese shredded from an 8 oz block, reserving the rest of the block for another time
