Ingredients
  • 10 Chicken Thighs seasoned with salt and black pepper
  • 6 Golden Yukon Potatoes washed and cut into wedges
  • 5 Carrots peeled and quartered
  • 2 Fennel bulbs halved and then quartered
  • 1 Shallot halved and then quartered
  • 1 Red onion halved and then quartered
  • 1 Garlic bulb halved
  • 1 tbsp. Hot paprika
  • Handful of thyme
  • Salt and black pepper to taste
  • Extra virgin olive oil
