Sonia's Spicy Sausage Stew
Ingredients
  • 1lb hot Italian sausage, sliced
  • 1 large onion, diced
  • 1 clove garlic, minced
  • 1 cup fresh mushrooms, sliced
  • 2 carrots, sliced
  • ½ cup fresh parsley
  • ½ tsp dried sage
  • 1 16oz can chickpeas, reserve liquid
  • 3 cups chicken stock
  • Salt and pepper to taste
Steps
  1. In a large soup pot cook sausage until brown.
  2. Add onion, garlic, mushrooms and carrots ... cook about 5 min.
  3. Add stock, spices, chickpeas with liquid.
  4. Simmer covered 30 min.
  5. Serve with fresh parsley on top.
