Seafood Creole with Shrimp and Fish
Ingredients
  • 3 tablespoons oil, or  bacon drippings
  • 2 tablespoons all-purpose flour
  • 4 green onions, with tops, finely chopped
  • 1 clove garlic, minced
  • 2 stalks celery, finely chopped
  • 2 (16-ounce) cans tomatoes
  • 1 bay leaf, crumbled
  • 1 teaspoon salt, or to taste
  • 1 teaspoon thyme, or to taste
  • Freshly ground black pepper, to taste
  • Tabasco sauce,  to taste
  • ½ to ¾ pound catfish fillets, cut crosswise into 1-inch strips
  • ½ pound shrimp, shelled and cleaned
