Roasted Cauliflower Salad
Ingredients

  • 1 small head cauliflower, broken into small florets (about 5 cups)

  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 cup orzo pasta
  • ¼ cup thinly sliced red onion
  • 1 cup crumbled feta cheese
  • ⅔ cup dried cherries
  • 4 cups baby spinach
  • subheading: For the Dressing:
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon honey (Kim uses 1TB)
  • 1 teaspoon Dijon mustard (Kim uses 1TB)
