  • 30oz (850g) canned Black Beans rinsed & drained
  • 3 cups (400g) cooked Rice (any variety)
  • 1 Medium Red Bell Pepper
  • 1 Medium Green Bell Pepper
  • 1 Medium Onion sliced root to stem (half moons)
  • 1 Jalapeño
  • 4 cloves Garlic
  • 2 Tbsp (30ml) Avocado Oil
  • 1 ½ tsp (7.5g) Adobo Seasoning
  • 1 tsp (5g) Cumin Powder
  • 1 tsp (5g) Onion Powder
  • ½ tsp (2.5g) dried Oregano
  • Salt & Pepper to taste
  • Optional: 1 cup (100g) Vegan Cheese shreds of choice

  • Cilantro Cream
  • ⅔ cup Raw Cashews soaked and rinsed
  • 1 bunch fresh Cilantro (40g)
  • ⅔ cup Water (plus more if needed)
  • Juice from 1 Lime
  • 1 clove Garlic
  • Salt & Pepper to taste
