Creamy Korean Gochujang Pasta

  • 1 medium shallot diced
  • 3 cloves garlic minced
  • ½ cup almond milk or another milk of choice
  • subheading: For gochujang sauce:
  • 2 tablespoons gochujang paste use gluten-free if needed
  • 1 tablespoon maple syrup or another liquid sweetener
  • 1 tablespoon soy sauce or tamari/shoyu (use gluten-free if needed)
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch
