Apple-Cheddar Coffee Cake (Canadian Living Magazine - 1980)

Ingredients
  • 1½ cups sifted all purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¼ cup butter
  • ½ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ⅔ cup milk
  • 1 cup grated cheddar cheese
  • 4 cups thinly sliced, peeled apples

  • 2 tablespoons flour
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 2 tablespoons butter
Steps
  1. Sift flour, baking powder, and salt. Cream butter and sugar. Beat in eggs and vanilla. Add dry ingredients alternately with milk, blending thoroughly. Turn half the batter into a greased 8-inch square cake pan. Add in layers: half the cheese, half the apples, then remaining cheese, batter and apples.
  2. To prepare the topping, combine dry ingredients; cut in the butter until mixture resembles coarse crumbs. Sprinkle over apples. Bake for 30 to 35 minutes in a 375°F oven. Serve warm. Store leftover cake in the refrigerator Reheat 15 minutes at 325°F before serving. Makes 6 to 8 servings.
