Instant Pot Chili With Rice
Ingredients
  • 1 large can diced tomatoes
  • 1 can tomato sauce
  • 1 can kidney beans
  • 1 smallish onion
  • 3 cloves garlic
  • chili powder
  • cumin
  • salt & pepper
  • 4 sticks celery
  • some frozen corn
  • 1lbs ground beef extra lean
  • olive oil
  • ½ cup rinsed basmati rice
  • ½ cup water/broth
Steps
  1. Lightly drain diced tomatoes
  2. Drain & rinse beans
  3. Slice celery, garlic & onion
  4. Turn instant pot on saute - add olive oil, when hot add garlic and onion - saute until half browned - add ground beef and a generous amount of salt & pepper - cook until browned and shut instant pot off.
  5. Add tomatoes, tomato sauce, veggies, chili powder and cumin, more salt & pepper maybe, rice, liquid, and stir well, add beans and stir again - turn instant pot on high pressure for 4 minutes, and then time a natural pressure release of 10 minutes before flipping the valve.
  6. Serve, add cheese, and enjoy!
