I am following the Trim Healthy Mama (THM) Meal Plan for weight loss and maintenance. I am only 3 months into this meal plan and love the recipes and food choices.

1⁄2 pound ground beef

4 tablespoons butter, divided

3⁄4 cup carrots, diced

3⁄4 cup celery, diced

3⁄4 cup onion, diced

1 teaspoon dried basil

1 teaspoon dried parsley

4 cups potatoes, diced

3 cups chicken broth

1⁄4 cup all-purpose flour

1 to 2 cups Velveeta, cubed

1 1⁄2 cups whole milk

3⁄4 teaspoon salt

1⁄4 to ½ teaspoon black pepper

1⁄4 cup sour cream

Onion rings, green onions, and crumbled bacon for toppings (optional)
