Ingredients
  • 1 pound medium to large raw shrimp peeled, deveined, tails removed, and chopped into ¼” pieces (I use 3¼0 count shrimp)
  • 1 cup freshly squeezed lime juice
  • zest from 1 large lime
  • 1 cup peeled and diced Persian or English cucumber
  • 1 cup seeded and diced red bell pepper
  • ½ cup chopped fresh cilantro leaves
  • ½ cup diced red onion
  • 1 large jalapeno minced (add as little or as much as you like)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
