Nan's Zucchini Slice
Ingredients
  • 2 medium zucchinis, roughly chopped
  • 2 carrots, roughly chopped
  • 1 onion, peeled and chopped in half
  • Approx 250g) ham or bacon (Nitrate free if possible)
  • 5 large eggs
  • 2 tblsp thermomade veggie stock (or a few good grindings of salt and pepper)
  • 30g olive oil
  • 1 cup plain flour (wheat, spelt or buckwheat all work well)
  • 50 to 80g cheese (we use a mix of parmesan and tasty cheese, add more cheese if you like it cheesy)

  • This zucchini slice is our nan’s recipe.  It is something that we make on a regular basis, mainly because everyone eats it, but also because it is great for lunches, it makes a lot and it is fairly cost effective. You could bulk it up with extra veggies, but we pretty much just stick to what’s on the list.
