Turkey-Carrot-Bacon Loaf (Gf)
Ingredients
  • 2 lbs ground, organic turkey
  • 3 fat (or 6 skinny) carrots, shredded
  • 1 cup coarsely-chopped parsley
  • ½ teaspoon kosher salt, and several grinds black pepper
  • 2 large, organic eggs, beaten
  • A generous tablespoon Worcestershire sauce
  • 1 cup fresh bread crumbs (gluten-free Tapioca bread will work)
  • ¾ cup shredded, extra-sharp cheddar cheese
  • 6 oz tomato paste
  • 3 strips center-cut bacon
