Ingredients

  • 1 liter ( 4.25 cups) water
  • 100 g ( 3.5 oz) textured soy protein (or soy curls)
  • 1 ½ tbsp vegetable stock powder
  • 2 small bay leaves
  • 1 tbsp oil
  • ½ tbsp soy sauce or tamari, more to taste
  • ½ tsp smoked paprika
  • subheading: Creamy Mushroom Sauce:
  • 1 tbsp oil
  • 1 medium onion diced
  • 250 g ( 2 cups) mushrooms sliced
  • 2 small garlic cloves finely minced
  • 1 tsp onion powder
  • 1 ½ tsp vegetable stock powder
  • 180 ml ( ¾ cup) vegan cream (e.g. oat, soy)
  • 120 ml ( ½ cup) cold vegetable broth or water
  • 1 ½ tbsp cornstarch
  • 120 ml ( ½ cup) white wine see notes
  • ½ to 1 tsp soy sauce or tamari, more to taste
  • Sea salt, pepper, chili flakes to taste
  • Fresh parsley to garnish
  • Serve with spaetzle, noodles of choice, or rice
