Best Ever Beef Stew

1 tablespoon vegetable oil

1kg beef chuck stew meat, cubed into 1" pieces

1 tablespoon extra-virgin olive oil

1 onion, chopped

2 carrots, peeled and cut into rounds

2 stalks celery, chopped

Kosher salt

Freshly ground black pepper

3 cloves garlic, minced

¼ cup tomato paste

6 cups low-sodium beef broth

1 cup red wine

1 tablespoon Worcestershire sauce

1 teaspoon dried or fresh thyme leaves

2 bay leaves

500g baby potatoes, halved

1 cup frozen peas

¼ freshly chopped parsley, for garnish
