Soft Tacos (Beef or Veggie) with Mango Salsa
Ingredients

  • 2 cups chopped mango
  • 1 cup chopped red bell pepper
  • ⅔ cup chopped green onion
  • ¼ cup chopped cilantro
  • 2 tablespoons fresh lime juice
  • 1 to 2 tablespoons olive oil
  • 1 medium jalapeno pepper, minced
  • subheading: BLACK BEANS AND RICE:
  • 2 tablespoons olive oil
  • 1 onion, finely diced
  • 1 green bell pepper, seeded and finely dice
  • 1 green bell pepper, seeded and finely diced
  • 2 16-ounce cans black beans, drained
  • 2 cups brown rice
  • 4 ½ cups water
  • ½ teaspoon salt
  • 1 teaspoon ground cumin
  • ¼ teaspoon smoked paprika
  • 1 bay leaf
  • black pepper to taste
  • subheading: TOPPINGS:
  • Iceberg lettuce, shredded
  • Shredded cheddar cheese
  • Plain Greek yogurt whipped with a whisk, add a little lime juice to thin
  • 1 package tortillas (try whole wheat or corn)
