Ingredients
  • ¾ cup pineapple juice (from 1 6 oz. can)
  • ¼ cup less sodium soy sauce
  • 2 Tbsp. light brown sugar
  • 1 Tbsp. ketchup
  • 1 Tbsp. white wine vinegar
  • 3 large cloves garlic, minced (about 1 ½ Tbsp.)
  • ¼ tsp. ground ginger
  • 1 small jalapeno pepper, sliced (optional)
  • 4 ( 6 to 8 oz.) boneless skinless chicken breasts (or 2 lb. boneless skinless chicken thighs)
  • ½  fresh pineapple, peeled, cored, and cut into rings ½ in. thick
  • 1 ½ tsp. cornstarch
  • ¼ cup chopped scallions
  • Cooked white rice, to serve
